CREAMY BROCCOLI & SALMON SOUP

INGREDIENTS:
2 servings salmon fillet
1 potato (cubed and peeled)
1 bowl broccoli florets
1 cup almond milk
1 tablespoon almond cream cheese
Salt
pepper
METHOD:
Steam the potato cubes for 20 min until fully cooked (use a utensil to test). Add in broccoli florets and cook together for another 10 min.
Drain the cooked potato and broccoli, then blend in a food processor with almond milk, salt and pepper until smooth.
3. In the meanwhile, dry the salmon fillet, season with salt and black pepper. Put into the oven/air fryer for 8 minutes under 370 F.
4. Ladle the soup into bowls and lay the Salmon fillet on top.
