VEGAN CHEESY EASY PASTA

INGREDIENTS:
¼ cup diced onion
1 teaspoon minced garlic
1-2 handful sliced mushrooms
1-2 handful spinach
½ cup cup nut milk
2 tablespoon vegan cream cheese (replace with 1 cup of cashew or almond)
¼ cup nutritional yeast
1 teaspoon maple syrup/honey(optional)
METHOD:
Blend vegan cream cheese, nutritional yeast, nut milk, and maple syrup in a food processor until smooth.
Heat up a thin layer of water in the pan, stir in the garlic and onions until golden.
Stir in the cheezy sauce over medium heat until bubbling. Mix in spinach and mushroom. (Add in some pasta water if the liquid is too thick.) Simmer over medium heat for 1 minute.
4. Add in the cooked pasta, season with salt and black pepper. Cook for another 2 minutes.
