CHINESE BEEF NOODLE SOUP

INGREDIENTS:
2 servings beef shank (cut into larger chunks)
3 slices of ginger
3 cloves of garlic
1/2 chopped Green onion/Scallion
1 tablespoon rice wine (optional)
2 tablespoon soy sauce
1 teaspoon Chinese Five Spice
1/2 Carrots (cubed)
1/2 potato (cubed)
1 tomato (optional)
METHOD:
In a large pot with enough cold water, place in the beef shank. Throw in the sliced ginger, scallion and a drizzle of rice wine. Bring to a boil, then transfer the beef chunks out and drain.
In a new pot with boiling water, throw in the boiled beef shank, garlic cloves, scallions, carrots, tomatoes, and potatoes. Season with soy sauce, salt, and Chinese five spice.
Bring it to a boil; turns to small heat, and let it simmer for 40+ minutes.
Get your noodles ready and drained in a bowl, pour in the broth. Garnish with some chopped scallions.
Ready to be served!
