CHINESE BEEF NOODLE SOUP

INGREDIENTS:

2 servings beef shank (cut into larger chunks)

3 slices of ginger

3 cloves of garlic

1/2 chopped Green onion/Scallion

1 tablespoon rice wine (optional)

2 tablespoon soy sauce

1 teaspoon Chinese Five Spice 

1/2 Carrots (cubed)

1/2 potato (cubed)

1 tomato (optional)

METHOD:

  1. In a large pot with enough cold water, place in the beef shank. Throw in the sliced ginger, scallion and a drizzle of rice wine. Bring to a boil, then transfer the beef chunks out and drain.

  2. In a new pot with boiling water, throw in the boiled beef shank, garlic cloves, scallions, carrots, tomatoes, and potatoes. Season with soy sauce, salt, and Chinese five spice.

  3. Bring it to a boil; turns to small heat, and let it simmer for 40+ minutes.

  4. Get your noodles ready and drained in a bowl, pour in the broth. Garnish with some chopped scallions.
