SPOOKY PUMPKIN RICE

*VEGAN option available

INGREDIENTS:
1/4 pumpkin (cubed)
1 bowl leftover rice
1-2 sausages (diced) *VEGAN: replace with minced tofu.
1/2 cup diced onions
1 large tomato (diced)
1/3 cup diced mushrooms
1 tablespoon soy sauce
Seasonings: Salt, Black pepper, Chinese five spices, Cumin, Paprika
1 fermented bean curd (optional/recommended)
Steam the pumpkin cubes.
2. Mix the steamed pumpkin with the rice
3. In a large pan, drizzle a thin layer of water and stir in the onions until golden and soft
4. Add in the mushrooms and tomatoes for another 3-4 minutes.
5. Stir in the sausages for another 2-3 min then add in the rice. Season with soy sauce, salt, black pepper, Chinese five species, cumin, paprika and Chinese fermented bean curd.
Optional step: Add some spinach and mozzarella cheese
